Pat's Pork and Yam Pot

1 4- to 6-pound fully cooked boneless ham
1/2 cup finely chopped onion
1/4 cup margarine or butter
1 cup catsup
1 cup pineapple or apricot preserves, or orange marmalade
2 teaspoons dry mustard
Preheat oven to 325 degrees
Place ham on a rack in a shallow baking pan. If desired, score top of ham in a diamond pattern, making cuts about 1/4 inch deep. Insert a meat thermometer. Bake in a 325 degree oven for 1 1/4 to 2 1/2 hours or until thermometer registers 160 degrees.
Meanwhile, for sauce, in a medium saucepan cook onion in margarine until tender but not brown. Stir in catsup, preserves, and dry mustard. Heat through. Brush some sauce onto ham before serving; pass remaining. Serves 16 to 24.
Grill directions: In a covered grill arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place ham on grill rack over drip pan but not over coals. Insert meat thermometer. Lower grill hood. Grill for 1 1/4 to 2 1/2 hours or until meat thermometer registers 160 degrees. Prepare and serve sauce as above.
1 1/2-pound fully cooked center-cut ham slice, cut 1 inch thick
1 8-ounce can pineapple chunks (juice pack)
1/4 cup packed brown sugar
1 tablespoon cornstarch
1/8 teaspoon ground cloves or nutmeg
1/3 cup orange juice or 1/4 cup orange juice plus 2 tablespoons rum
1/2 cup light raisins
Oven 350-degrees
Trim fat from ham. Slash edges of ham at 1-inch intervals. Place on a rack in a shallow baking pan. Bake in a 350 degree oven for 30 minutes.
Meanwhile, drain pineapple chunks, reserving juice. If necessary, add water to reserved juice to measure 1/3 cup. In a small saucepan combine brown sugar, cornstarch, and cloves. Stir in pineapple juice, orange juice, and if using rum. Cook and stir until thickened and bubbly. Cook and stir until 2 minutes more. Stir in pineapple chunks and raisins. Heat through. Spoon over ham. Serves 6.
Microwave directions: Trim fat from ham. Slash edges of ham at 1-inch intervals. Place ham slice in an 8x8x2-inch baking dish. Micro-cook, covered with waxed paper, on 100% power (high) for 9 to 12 minutes, turning meat over once. Cover and keep warm. Meanwhile, drain pineapple chunks, reserving juice. If necessary, add water to reserved juice to measure 1/3 cup In a 2-cup measure combine brown sugar, cornstarch, and cloves. Stir in pineapple juice, orange juice, and if using, rum. Cook on high for 2 to 3 minutes or until thickened and bubbly, stirring after 1 minute, then every 30 seconds. Stir in pineapple chunks and raisins. Cook on high for 1 minute more or until heated through. Spoon over ham.
1 1/2 c. leftover pork or ham, cubed
3/4 c. sliced apples
1 c. peas
4 med. sweet potatoes, pared and sliced
Salt and pepper to taste
1 c. gravy or brown sauce
1/4 tsp. cinnamon
2 to 3 tbsp. bread crumbs or cracker crumbs
3 tsp. butter or margarine
Arrange pork, apples, peas and potatoes in alternate layers in earthenware baking dish. Season with salt and pepper.
Pour gravy over all.
Sprinkle with cinnamon mixed with bread or cracker crumbs. Dot with butter.
Bake in 350-degree oven about 40 minutes
Yield: 2-3 servings.
